One-Pot Lemon Herb Chicken Orzo
Everything cooks together. One pot. Zero effort.

Season chicken with salt, pepper, oregano, thyme.
Heat oil in Dutch oven or large pot over medium-high. Brown chicken 5-6 minutes. Remove and set aside.
In same pot, cook onion 3 minutes. Add garlic 1 minute.
Add orzo, broth, tomatoes, lemon zest. Bring to boil.
Add chicken back in. Reduce heat, cover, simmer 15 minutes until orzo is tender.
Stir in spinach and lemon juice. Cook 2 minutes until wilted.
Finish with parsley and Parmesan. The starch from orzo makes it naturally creamy.
