Red Lentil Soup with Lemon & Cumin

Heat oil in large pot over medium. Cook onion 5 minutes until soft.
Add garlic, cumin, turmeric, cayenne. Cook 1 minute until fragrant.
Add carrots, lentils, tomatoes, broth. Bring to boil.
Reduce heat, simmer 25 minutes until lentils are completely soft.
Use immersion blender to partially blend — leave some texture.
Add lemon juice and zest. Season generously with salt.
Serve with crusty bread. Keeps refrigerated 5 days, frozen 3 months.
