Cook noodles 1 minute less than package directions. Toss with a bit of sesame oil.
Mix sauce: soy sauce, oyster sauce, remaining sesame oil, sugar.
Brown turkey in wok or large skillet over high heat. Break up constantly. 5 minutes.
Push turkey to side. Add garlic and ginger, cook 30 seconds until fragrant.
Add vegetables, stir-fry 3 minutes — high heat, keep moving.
Add noodles and sauce. Toss everything together 2 minutes until sauce coats.
Finish with green onions and sesame seeds.
